Walnut pate – a raw food sensation

I’m hooked on this delicious pate and it’s so easy to make. It goes well with a salad or use as a dip with vegetable sticks.

You’ll need:

a food processor

100g of walnuts

a stick of celery

3 spring onions

tamari (wheat-free soy sauce)

a pinch of sea salt or Herbamare (sea salt with herbs)

flaxseed oil (optional)

Crunchy walnut pate

Soak 100g of walnuts in water for at least 6 hours (makes them more digestible). Drain the nuts and put them in a food processor – I use a Nutribullet – with 1 stick of chopped celery, 3 spring onions, 2 teaspoons of tamari and a pinch of sea salt or Herbamare. Whizz  for 5 seconds or more (I like to keep a bit of crunch). You may need to add a little bit of water to facilitate the blending.  Add more  tamari to taste, if liked. You could mix in a teaspoon of flaxseed oil to increase the anti-inflammatory  properties of this pate.
