Raw Food Courgette Hummus

This raw food hummus,  made with courgettes instead of chick peas,  tastes just like the “real” thing, if not better.  Try it on your friends and see if they can tell the difference.

I can’t believe it’s not hummus

You’ll need:

a food processor e.g. a Nutribullet

50g of sesame seeds

150g of courgettes, peeled and roughly chopped

1 tablespoon of tahini (sesame seed paste)

30ml of olive oil

1/2 teaspoon each of ground cumin and sumac

1 clove of garlic

juice of 1/2 a lemon

1/2 teaspoon of sea salt or Herbamare (sea salt with added herbs)

Optional extras: a few teaspoons of Boabab powder boosts vitamin C content. You could also add a few teaspoons of mushroom powder. If you like your hummus with a kick, add some chilli flakes to taste

What to do:

Blitz all of the ingredients in a blender to make a smooth paste. Sprinkle on some extra sumac for  a bit of colour. Serve with vegetable sticks or crackers.
