Summer Berry Breakfast Smoothie

Exams are upon us and teenagers everywhere are heading out of the house without breakfast. How do we tempt them to eat something good to power them through a demanding morning until lunchtime? Everyone loves a smoothie and it tastes so delicious they’ll want one every morning (it also makes a good snack when they come in starving from school or college).

Summer Berry Breakfast Smoothie

130-150 ml of cloudy apple juice
I heaped tbsp of porridge or jumbo oats
1/2 a ripe avocado peeled and pitted or a small banana
1 tbsp tahini (sesame seed paste) or peanut butter (no added sugar variety) or 1 tbsp mixed pumpkin and sunflower seeds
a handful of fresh seasonal berries e.g. raspberries, strawberries, blueberries or use frozen berries straight from the freezer
1/2 tsp of cinnamon (optional)
1 tsp oc cocoa nibs (optional)

If you have time, soak the oats in the apple juice the night before and keep in the fridge. Load all of the ingredients into a food processor (or use a hand blender) and blend until smooth. Add some water if you like a runnier texture.
Optional sprinkles: cinnamon or cocoa nibs
