Chocolate chia pudding

With just four ingredients, this is a simple dish to make in advance (you’ll need to chill it in the fridge for at least two hours). It makes a good breakfast- the chia seeds will power you through the morning – or serve as a dessert.
Ingredients for two generous servings:
150 ml of plant milk e.g. oat, coconut, almond or hemp
2-3 dried apricots or dates (stoned)
25 grams of chia seeds
2 tablespoons of cacoa powder (add more cacoa powder if you are a chocolate fan)
Optional extra- berries to serve
Simmer the apricots or dates in a little water for about five minutes until soft. When cool mash them to a paste. Mix together the mashed apricots/dates, milk, chia seeds and cacoa. Spoon into two serving dishes. Chill in the fridge for at least two hours. Decorate with berries. And that’s it!
